- Mix the marinade ingredients. Add the chicken and put in the fridge for 1 or 2 hours.
- Preheat the oven to 200 degrees..
- In a pot, add the veggies with a pinch of salt and cook until soft.
- Add the marinated chicken to the veggies. Cook for 10 minutes. Then add a glass of water. Cover with the lid and let simmer for for 5minutes on high heat.
- Move the chicken mixture to a baking tray and bake it in the oven for 20 minutes first, then add the green olives and cook again for ~30 minutes + grill the top for 5 minutes.
- You might need to add a bit of water half way through cooking if needed. The sauce shouldn’t be too watery..
